Swedish Mushroom Meatballs and Egg Noodles
This dish is full of flavor and comfort. The wine you will be drinking is big and bold and deserves a comfort food like this dish.
Ingredients
Meatballs
2 pound ground beef or lamb
1 large onion chopped
3 tablespoon fresh parsley, chopped
2 eggs
¾ cup bread crumbs
salt and pepper to taste
Cooking oil spray
Mushroom Sauce
1/2 pound cremini mushrooms sliced
4 tablespoon butter
¼ cup flour
1 ½ cup chicken stock
1/2 cup heavy cream
salt and pepper to taste
Prepared mashed potatoes, rice or noodles
Method
Combine the meatball ingredients and shape into 1 inch meatballs. Space apart evenly on a baking sheet and bake for 20-25 minutes at 400 degrees Fahrenheit.
In a sauce pan melt the butter for the sauce. Add the mushrooms to the skillet and sauté for about 5 minutes until they start to brown. Add the flour and cook for a further 1 minute. Add the chicken broth and heavy cream. Cook for 10 minutes, stirring occasionally. The sauce should thicken. Add salt and pepper to taste.
Serve the meatballs and sauce over a carb of your choice- mashed potatoes, noodles or rice.
